Slowly but surely I’m really getting into making cakes even though I wasn’t sure that I could bake! Here’s a collection of my favorite recipes. They are basic, basic recipes but I love them so much I had to share.
Coffee Cupcakes
A basic cupcake recipe modified for coffee lovers.
Ingredients
- 2 large eggs
- 1 tsp vanilla essence
- 2 tsp cinnamon powder
- 125g/4oz caster sugar
- 125g/4oz soft margarine
- 125g/4oz self-raising flour
- Sultanas as many as desired
- 2 tsp instant coffee
- 1 cup of warm water
Directions
- Preheat oven to 180C/350F/Gas 4.
- Mix the coffee granules and cinnamon powder in the cup of water until completely dissolved. Add as little or as much coffee as required for taste.
- Set out 24 cupcake cases in a baking tray.
- In a large mixing bowl cream the butter and sugar together.
- Add the eggs one at a time, ensuring that they are mixed in well.
- Pour in the dissolved coffee mixture to the eggs, butter and sugar. Mix well.
- Add the flour to the mixture slowing, beating all the ingredients together.
- Add as many sultanas as required to the mixtures, stirring in well.
- Fill each cupcake case with mixture, allowing room for the cakes to rise.
- Cook the cakes for around 18-20 minutes, until golden brown.
- Remove from the oven and leave to cool.
- Decorate as required
Mocha Iced Coffee
Just like a Starbucks Mocha Frappe
Ingredients
- Enough ice cubes to fill your cup
- 3 teaspoons instant coffee in your preferred strength
- 2 teaspoons sugar
- 1 teaspoon powered cinnamon
- 1 teaspoon chocolate powder
- Milk - enough to ¾ fill your cup
Directions
- Crush the icecubes in an ice cube crusher.
- Put the milk, coffee, cinnamon, sugar and chocolate powder into a blender and blend until completly mixed together.
- Add the crushed ice cubes to the mixture and blend for a few seconds.
- Pour mixture into your mug or glass.
- Add some whipped cream to the top of your drink and sprinkle some chocolate powder on top.
